One of our favorite coffee houses is called, Palm Coast Coffee in St. Simon’s Island, Georgia. It is our tradition to spend the morning drinking coffee, checking email and nibbling on treats like their granola bars.
For those of you who can’t travel to the Golden Isles of Georgia for the real thing, you will find the granola bar recipe below!
Ingredients:
- 10 cups rolled oats
- 2 cups all-purpose flour
- 2 tspn baking soda
- 1 + 3/4 cup honey
- 1 cup brown sugar
- 1 + 1/2 cup unsalted butter
- 2 tspn vanilla extract
- 3 cups semi-sweet chocolate chips (or dried fruit, 2 cups raisins, dried cranberries or frozen raspberries in place of the chocolate chips and nuts)
- 2 cups chopped nuts (walnuts, pecans, macadamia nuts, etc.)
Stir together the first three ingredients in a large mixing bowl. In a sauce pan, combine the honey, brown sugar, butter and vanilla extract and bring to a boil. When it starts foaming and darkens in color, remove it from heat and stir down. Return the honey mixture to stove and bring to a boil. Remove it from the heat and add it to the flour mixture and let it cool slightly.
Gently fold the honey into the flour mixture. Add one of the following combinations:
- chocolate chips and nuts
- dried fruit and nuts
- 2 cups raisins
- 2 cups dried cranberries
- 2 cups frozen raspberries
Grease a half sheet cake pan and line with parchment, letting the parchment paper come up the sides of the pan. Oil parchment. Press the mixture flat into the pan and let cool COMPLETELY!
Bake at 325*F. for 15-20 minutes. Cool completely before cutting and wrapping the bars. Shelf life is about one week.
