What’s the difference between a griddle cake and a pancake you may be wondering?
Well, the biggest difference is that the griddle cakes are generally gluten free and ideal for vegetarians. If you’ve ever had the veggie pancake then you know how good these can be.
This recipe can be done with a wide variety of beans, just about any bean you can thing of. The goal is to sneak the beans into the pancakes or in this case (griddle cakes) without really being able to taste the.
The beans give you that added protein which pancakes lack. So, how do you do this and still make the griddle cakes taste so good? Easy! Everything you cook on a griddle tastes pretty good, so it just comes down to mixing everything up and using the proper griddle.
If you want to use a multigrain pancake pre-made mix you can do that to save some time. There are many to choose from and super good for you. The basis of the recipe is similar to a pancake but the taste is a bit different.

Ingredients
- 1 cup multigrain pancake and waffle mix (I like Arrowhead Mills Pancake & Waffle Mix)
- 2 Large eggs
- ½ cup rice, soy or dairy milk, more if needed
- ¼ tsp. salt
- 2 cups sprouted Beans of your choice (Green Beans or Mung Beans)
- ½ cup scallions (white and green)
- Coconut oil is best to prevent sticking
- Condiment suggestions: Yogurt
Directions
The first step is to cook the beans. Depending on the type of beans you can cook them however you want. There are a million different ways to cook beans, so I’ll leave that up to you!
Mix together all your dry ingredients and then add the egg and melted butter. Stir vigorously and then add a little milk to make the batter so that it can pour easily.
I always like to add about one or two tsp. of coconut oil onto the griddle. It’s best for this to use an outdoor griddle because you want it to heat up to the maximum. If you don’t have an outdoor griddle then you should use a cast iron griddle.
Depending on your griddle, cook for about 2-5 minutes and then once the bubbles start to form it’s time to flip these babies over.
After that you’ll find that they lightly brown very easily but it can take a bit longer because the beans are inside.
