If you like fried bananas and fresh cooked bacon, I think you will like this breakfast treat. I created this one morning when I had an over-ripe banana in the fridge.
Ingredients
- 1 over-ripe banana (skin should be black), mashed
- 1 cup buttermilk Complete Pancake mix (just add water type)
- 1 Tablespoon sugar
- 1 teaspoon pure vanilla extract
- 1 package fresh thick bacon slices
In a large skillet, fry the bacon. While the bacon is frying, mash one over-ripe banana in a bowl. Add sugar and vanilla and mix well. Add pancake mix, water and stir well until combined.
Remove the bacon from the skillet but leave the grease and bacon bits in pan. Turn heat to medium-high. When water drops sizzle, place a large spoonful of batter into the grease.
Cook until browned, flip once and cook until done through.
Place pancake on plate, add pure maple syrup and a few pieces of bacon.
